SWEET AND SOUR HOMEMADE KEBABS

INGREDIENTS. 500grams minced beef. 1 Tablespoon curry powder. 1 Tablespoon mixed herbs. 1 Tablespoon mixed spices. 2 Bunches of coriander. 1 Table spoon beef masala. 1 cherry tomato. 3 Eggs. 1 Tablespoon black pepper. (Optional) 2 Cups of oil. 2 Tablespoons light/dark soy sauce. METHOD. In a glass bowl, add your minced beef, currypowder, mixed spices, mixed herbs, beef masala, black pepper, soy sauce and the coriander leaves. Mix thoroughly to incorporate all the flavors. Marinate in the fridge for one hour. After an hour, take out your meat and start forming balls. Compress them into sausage shape like structures, though this will depend on the size and length you want on your final product. Once satisfied with the size, in a separate bowl break your eggs a stir them till perfectly mixed. Using a fork and a pair of tongs, add your kebabs to the eggs, coat generously. Meanwhile as this takes place, ensure your cooking oil is heating on medium heat in a frying pan. Once hot, add the kebabs 2 or 3 at a go so as not to overcrowd them in the pan for one to one and a half minutes. Remove them from the pan and back into the eggs mix for another round of coating .Note that the more times you repeat this step, the fluffier your kebabs get. On the last round of cooking your kebabs, let them cook little bit longer, preferably 4-5 minutes so as to cook the mincemeat inside the egg coating. Once crispy and brown, remove from the oil and place on a kitchen towel to drain excess oil. Garnish with some wringed tomatoes or leaves of coriander. SERVE HOT.
