STRAWBERRY RED, MDALASINI AND THYME PANCAKES

SERVES 2.



INGREDIENTS.

2 Eggs, beaten.

100 Grams of all-purpose flour

1 Teaspoon of Thyme

2 Tablespoons of Mdalasini/ cinnamon

3 Drops of Vanilla essence/ extract.

1 cup of milk (optional)

3 Tablespoons of sugar.

1 Teaspoon of salt.

1 Teaspoon of Strawberry red food color.

Vegetable oil.

METHOD.

Sieve and mix all the dry Ingredients together which include the flour, mdalasini, sugar and salt in a large bowl. Next, add the eggs while stirring in the flour until it is well incorporated then add the milk but if you’re allergic to milk you can use water, it still gives the same result. Make sure your batter consistency is flowing but if you want your pancakes thin and feather weight you might wanna make your batter runny then add your vanilla extract/essence.NB; when adding the food color, do it bits by bits until you attain your desired shade of red because too much of it may alter the final result.

Next, heat up your pan on medium heat, then pour a sizeable amount onto the base of the pan and let it form bubbles on the upper side then drizzle some oil on around the pancake for easy flipping over. Cook until it hits golden brown then remove and plate. Do the same for the rest of the batter. Serve them up hot with some hot chocolate!!!!They are perfect for brunch.
