
MUM'S BLACKFOREST VICTORIA SANDWICH

SERVES 4.

INGREDIENTS.
100 grams of butter/ margarine.
100 grams of normal /caster sugar.
2 eggs, beaten.
100 grams of wheat flour, sieved.
1 Tablespoon of baking powder
2 Tablespoons of black food color.
FOR THE ICING.
1 Medium sized pack of natural thick yoghurt.
1 Bunch of grapes
2 Tablespoons of normal/caster sugar.
2 Tablespoons of margarine
METHOD
*Please note that a Victoria sandwich is the only pastry that has a 1:1 ratio where as a normal cake has a 2:1 ratio where the ratio 2 is the flour.
1: Cream the butter or margarine until soft and fluffy. In case you are not sure, I have a video on how to cream this two together to a perfect consistency on my instagram highlights section @Rogzys_kitchen. The highlight is easy DIYS.
2: Gradually add the beaten eggs.
3: Lightly fold in the sieved flour and baking powder.
4: Divide into three portions, add different colors in the different batches of batter.
5: Properly grease the baking tin and dust with flour and dust off the excess.
6: Systematically pour in the different colors one at a time.
7: Bake at 200 degrees for 12 to 15 minutes.
8: Remove and turn on a wire rack to cool.
9: Cut into half and spread the lower half with jam, then place the other half back on top.
