Girly pineapple-pork skewers

A tasty, easy to recreate recipe that will sweep you off your feet! I can guarantee you that!

Ingredients

1 can of Smirnoff ice pineapple punch

1 Medium size piece of pineapple , cubed or triangle chopped

1 tsp of curry powder

1 tsp of paprika

1 tbsp of soy sauce

Salt and pepper to taste

1/4 kg of pork

A dash of cinnamon

1 teaspoon of beef marsala

Method.


In a medium sized bowl, add your chopped meat. Please ensure the meat is chopped into medium sized chunks.

Next step, add your spices.

Mix well and ensure every piece of meat gets evenly coated.

After you've mixed everything, cover with cling film and marinate for 2 to 12 hrs. The long the marination process the more intense the flavour profile is. Also ensure that the meat is refrigerated to avoid going bad

Soak your skewers in water to prevent them from burning during roasting

Next step, add the chopped pineapples and about 40 ml of the Smirnoff ice pineapple punch

Leave it to soak for 30- 45 min.

The reason we didn't add the alcohol when marinating is cause pork is a soft tissue protein and the alcohol content would have eaten into too much of the tissue.

Next step, stack your pieces of meat alternating with the pineapples..

I mean look at that!

Pre- heat your oven at 180 degree for 10 minutes

Add your skewers into the oven on the middle rack and cooking for 30 minutes while turning at the half way mark.

After the time is up, remove and re-apply the left over marinade from earlier on.


Now for the last step, change your oven setting to upper heat and cook them for 5 min so as to give them a nice colour and crisp.


Remove and serve hot with some wedges.
