
GARLIC BUTTERNUT SOUP WITH CROUTONS.

INGREDIENTS.

½ medium sized butternut
1 medium sized red onion
1 Tablespoon of cooking oil
2 Cloves of garlic.
1 bunch of cilantro/dhania
1 Teaspoon of salt.
1 Pinch of black pepper.
1 Teaspoon of rosemary.
1 Slice of bread.
Hot water
1 Tablespoon of natural yoghurt.
METHOD.
1: Chop up the onions and the butternut after peeling off the skin and wash thoroughly. This enhances quick and thorough cooking of the butter nut.
2: Fry the onions in a cooking pot until translucent and not golden brown then add your rosemary, garlic, yoghurt and black pepper.
3: Add the butternut and let it absorb the flavor for about a minute or two.
4: Add in the hot water to cover the butter nut then cover to cook for about 45 min
5: Once the butter nut is ready scoop it aside to cool abit.
6: Toast up the slice of bread, buttered either in the oven, toaster or a pan until crispy and abit charred then cut into pieces of your liking. That’s how you make croutons!!!
7: Next, add the cooked butternut into a blender and blend till smooth
8: Add the blended soup onto a bowl.
9: Garnish with the croutons and the cilantro.
10: Serve hot!!!
