I'm a lover of cakes and especially small cakes. This leading me to develop a recipe to quench my never ending thirst for any lushly done cake, anytime and anywhere SERVES 3

Ingredients. 1/4 cup of margarine /butter 1/4 cup of sugar 1/2cup of all purpose flour 1/2 teaspoon of baking powder 1/2 teaspoon of Cardamom 1/2 teaspoon of lemon zest Vanilla essence/ extract (Optional) 4r food colour Salt METHOD. 1: In a small bowl, add your margarine and sugar. Cream until fluffy and has a cream like colour. 2: Add your essence, Cardamom and cream for a minute. At this point, preheat your oven at 150 degrees for 15 minutes 3: In another bowl, add your flour, baking powder and sieve to incorporate air. 4: Mix the dry and wet ingredients and mix properly and add a small pinch of salt. To soften the batter to the right consistency, you may use water, milk or a mixture of both. Make sure it has a dropping consistency 5: Next, add your food color. Now you need to note this about food colour, its colour deepens as continually stir it in so I would advice you go easy on the food colour. Too much of it also affect the taste of the end product, trust me I learnt the hard way 6: Now time to grease you baking tins. Apply a small amount of margarine inside your tins and then dust it with flour. Tap off to remove excess. Please note this is a very crucial step as it prevents your cakes from sticking on the inside of your cake tin/mould 7: Now add in your mix to 3/4 way of your cupcake tin. Leave the other space as allowance for rising of the cake. Grate some lemon zest on top for That citrus flavour. 8:Bake at 150° for 30 minutes 9: Leave to cool and serve with your favorite beverage HAPPY COOKING BY ROGZYS_KITCHEN.
