CINNAMON AND LIMEZEST MANDAZIS

SERVES 4

INGREDIENTS 500 Grams of all-purpose flour 2 Tablespoons of cinnamon 1 Tablespoon of lime zest 1 Teaspoon of baking powder 1 Cup of milk 1 Teaspoon of salt 4 Tablespoons of sugar 3 Drops of vanilla essence/extract 1 Medium-sized lemon/lime METHOD. In a bowl, add your flour, cinnamon, lime zest, salt, sugar and the vanilla essence and mix together properly Nb; to get the lime zest, grate a lime or lemon rind after careful washing and take care not to grate the white part but only the rind. Next, add the milk while mixing the dough. In order for your baking powder to be at its level best potential, mix it with some vinegar in a separate place then add it to the dough mixture as it is still bubbling and mix together until the dough has a smooth consistency and is not sticking on your hands and make sure it not again too dry. Apply oil on the dough and on the bowl so as to prevent drying and sticking and leave to rest for at least 4 to 6 hours. When ready, roll out the dough and divide into 2 portions and spread it out evenly making it neither too thin nor too thick so as it can cook inside. Cut out according to your favorite shapes which may include circles, squares, star shaped or even triangle. It’s all up to you.
