CARDAMON BROWN ONION SOUP.

Since this month has just decided to be rainy all the way, lets just the make the most out of this breezy weather.
INGREDIENTS.
5 Medium size onions, finely chopped.
½ a teaspoon of black pepper.
1 Bay leaf.
1 Teaspoon of mixed herbs.
1 Teaspoon of cardamom powder.
1 Teaspoon of coriander powder.
25 Grams of butter or margarine
½ teaspoon of cinnamon powder.
1 Tablespoon of all-purpose flour.
METHOD.
1: In a thick bottomed pan/sauce pan, melt your butter/margarine.
2: Next, add your chopped onions and some salt. Cook till well brown/caramelized.
3: While still caramelizing, add your black pepper and bay leaf.
4: You can add some water to aid in the caramelization of your water so as to prevent your onions from burning
5: Add your cinnamon powder and coriander powder.
6: Once your onions are well browned, add your all-purpose flour and give a quick stir to prevent burning.
7: Add a cup full of water/stock, lower the heat and leave to simmer for 10 minutes.
8: Add your mixed herbs and cardamom powder.
9: Once ready, turn off heat and serve hot with a piece of soda whose recipe is also up on my website.
PS. For a finer soup, you can pass the final product through a conical strainer. Please I said a conical strainer and not a sieve!
