BASIL CREAM OF TOMATO SOUP.(CRÈME DE TOMATES FRAICHE)

SERVES 4.
INGREDIENTS.
2 Tablespoons of cooking oil.
2 Tablespoons of bacon trimmings.
4 Medium sized carrots, peeled and diced.
2 Medium sized onions, diced.
50 grams of Wheat flour.
7 Medium sized fully ripe tomatoes.
1 tablespoon of tomato paste.
Bouquet garni (basil, rosemary, thyme)
Stock/water.
Salt to taste.
METHOD.
1: Heat the oil in a thick bottomed pan and add the onion, carrot and brown them lightly.
2: Mix in the flour and cook to a sandy texture then gradually add the stock and stir to bring to a boil.
3: Wash the tomatoes, remove the eyes and quarter them. Add to the soup after it has boiled.
4: If it lacks color, add some tomato puree. Add the bouquet garni and season with salt and leave to simmer.
5: Remove bouquet garni and liquidize the soup either through passing through a conical strainer or blender.
6: Return to pot and bring to boil.
7: Serve with croutons.
